The Park Lane HK updates SKYE Roofbar concept

The Park Lane Hong Kong, Autograph Collection, has reopened SKYE Roofbar & Grill following a complete revamp, introducing a menu focused on premium meats, sustainable seafood, and farm-to-table dining inspired by the hotel’s rooftop garden.
Situated overlooking Victoria Harbour and Victoria Park, the venue has updated its dining experience to focus on grill craftsmanship and conscientious sourcing.
The aim of the relaunch is to celebrate SKYE’s 10th anniversary by repositioning the iconic rooftop venue as a premier, grill-focused culinary destination that highlights master craftsmanship, responsible sourcing, and hyper-local farm-to-table dining against the backdrop of Victoria Harbour.
The revised menu features a selection of meats, line-caught seafood, and vegetables. Highlighted cuts include Australian Stockyard Wagyu tomahawk and striploin, Korean Hanwoo T-bone, and US Prime rib-eye and flat iron, served alongside artisanal sauces such as red wine jus, chimichurri, and house-made barbecue sauce.
On the seafood side, offerings include pan-fried skate wing, salt-crusted seabass, king prawns with Kampot pepper, and Boston lobster, as well as seafood towers and caviar selections sourced from trusted suppliers. The menu also incorporates produce-driven vegetarian options, such as roasted paprika cauliflower steak, an organic terroir salad, and rooftop garden greens.
The target audience includes local and international foodies—particularly steak and grill enthusiasts seeking top-tier cuts—as well as eco-conscious consumers who value ethical sourcing, and lifestyle diners looking for an elevated rooftop experience with iconic Victoria Harbour views.
In line with The Park Lane Hong Kong’s sourcing policies, SKYE Roofbar & Grill works with local partners to source traceable seafood and ethically raised meats. Daily seafood items featured on the seafood tower and selected fish dishes are supplied by partners that adhere to environmentally conscious practices.
The venue's farm-to-table framework utilises ingredients from local Hong Kong organic farms as well as the hotel's own rooftop hydroponic garden, which supplies herbs and greens for salads and sides. Dishes such as the Organic Terroir Salad and locally raised Ping Yuen chicken glazed with duck fat reflect this focus on regional produce within a modern menu format.
Alongside the culinary relaunch, SKYE Roofbar has expanded its Hong Kong street cocktail Collection with five new creations named after local thoroughfares: Tonkin Street, Caine Road, Sai Yeung Choi Street, Lascar Row, and Shanghai Street. These new additions sit alongside existing menu favourites, utilising local ingredients and flavors to reflect different neighborhood stories.
The relaunch is amplified by social media, PR and influencers, targeted eDMs to the hotel's database, digital displays and physical touchpoints across the hotel property and targeted programmatic and display ads to reach food enthusiasts across the city.

Most recently, the hotel launched a collaborative campaign with local designer brand SPARKLE by KAREN CHAN, combining fashion, travel, and local culture.
The partnership aligns with the hotel's ongoing initiative to support homegrown creative talent through dedicated exhibitions and events. The activation arrives as Hong Kong reinforces its position as a regional fashion capital, hosting a series of major industry events that have elevated local designers on the global stage.
SPARKLE by KAREN CHAN, recognised for its original textile designs inspired by Hong Kong's heritage, arts, and urban landscape, was selected to spearhead the visual direction.
